(yield 4 quart jars=3 doz. cookies per jar)

Mix the following dry ingredients:

2 ¾ c. flour
2 tsp. salt
1 tsp. baking soda
2 c. brown sugar
1 c. white sugar
1 c. solid shortening
6 cups uncooked oats
1 cup raisins or craisins
1 cup chocolate chips

Oatmeal Raisin Chocolate Chip Cookies

Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray. In a large coffee cup, mix one egg, ¼ c. water, and 1 tsp. vanilla extract. Pour one jar of cookie mix into a bowl. Pour the egg mixture over the dry cookie mix and stir until moistened. Scoop out cookies with 2 teaspoons and place on sheet to bake for 14 minutes. Cool on wire cooling rack. Yield: 3 dozen delicious cookies
