Connemara Pancake Mix

These are hearty, fantastic pancakes from an area in Ireland. It's great to pack this mix into a basket with jam, syrup, and fresh fruit.

1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
2/3 cup sugar
1/4 cup Irish oats
1 tablespoon sunflower seeds
1 tablespoon sesame seeds
2 teaspoons baking powder
1/4 teaspoon cinnamon

Store in airtight container.

Connemara Pancakes

4 eggs
1/2 cup milk
1/4 cup molasses
1 1/2 teaspoons vanilla
Connemara pancake mix
1-2 tablespoons oil

In large bowl, beat the eggs, milk, molasses, and vanilla until light. Add the Connemara pancake mix. Refrigerate the batter 2 hours or overnight. Blend with a whisk before use. Heat enough oil to cover the bottom of a griddle or saute pan. Pour 1/3 cup batter onto the hot oil and cook the pancake, turning once after bubbles form on unbaked side, until both sides are golden brown. Makes 6-8 large pancakes.
